Is there any method to seal the shui gow?

Do you need to use some thick constarch water to seal up tightly?

Lastly, do you have any special way to fold the skin?

Try it over the weekends, guess i didnt braise the mushrooms long enough cos the sauce is drying up real fast (maybe the fire is too big), felt tat it didnt fully 'absorb' the sauce.
