Personally I find that if you dip the finger directly into the syrup, chances are, you may over soak it and some may get more syrup than others. At least that was what happened to me when I tried it ...

As to the kaya, I don use agar agar powder as I don want my kaya to taste spongy like agar agar when it is set.

I half suspect I didnt let it rest enough coz I noticed at Auntie Anne' stall, the dough is left on the table top the whole time, makes it so much easier to roll out.
