This can be a starter served with warm bread or crackers. The garlic oil can be used on salad dressing or Chinese blanched vege - 油菜。 My hubby can make a meal out of this with a loaf of french bread, some wine and cheese! I recently made a batch for a party, used 10 heads of garlic and they were all gone.
Quite simple, just 2 ingredients.
Garlic cloves - peeled, kept whole (I usually peel 4 head of garlic at a time)
Oil (any kind of neutral oil will do, I wouldn't use extra virgin olive oil here though, it would be a waste)
Put garlic cloves in an oven safe bowl and barely cover garlic with oil. Bake 25 minutes @ 350F or until garlic is slightly caramelized and soft. Serve with warm crusty bread.
Note: I usually make this when I have the oven on for cakes or cookies or other dishes - to save energy. The key is to slowly bake the garlic so it becomes soft and sweet. They keep well in the fridge for 2 weeks.
