This version is just Butter, Mashed potatoes as topping
This version is Butter, Mashed potatoes and CHEESE
Ingredients
200g chicken fillet(no skin)
1 can of Campbell’s Chicken soup
200g mixed vegetables(frozen pack)
1 large white onion
20g butter(salted)
Toppings
4 Russett Potatoes, cooked, mashed
60g salted butter
100g Mozzarella Cheese , shredded
sprinkle of dried herbs(parsley)
Method to cook the filings
1. Chop chicken into thick chunks or dices
2. Chop onion into dices
3. Heat up pan and add butter to heat and melt
4. add onions to saute for a while.
5. Add chicken, mixed vegetables and stir fry over high heat for 5 mins.
6. Now pour in Soup base. DO NOT ADD ANY WATER!
7. Stir to mix everything together. Turn off heat, remove and set aside
Method for topping
1. Put potatoes in a sauce pot and add water, enough to cover all the potatoes. Boil for 15 minutes or until its soft and cooked.
2. Peel away the skin and cut into smaller chunks.
3. Add to a blender to puree, add butter to it to blend till smooth.
4. Remove and set aside.
Method to assemble
1. Add 1.5 tbsp of filling into a disposal tin foil cup
2. Add 2 tbsp of topping on top of it. Spread to even out, sprinkle cheese over the top and sprinkle dried herbs.
3. Baked in preheated oven 200C for 10 mins or until the top is evenly browned
4. Serve immediately while its still warm. _________________ Gina

its the best loved recipe. Served in parties, kids usually take 3 to 4 pcs. so if you are having a party with kids in mind, make sure you make extras. _________________ Gina

if you noticed, my recipe has no salt or seasoning added at all as the chicken soup is already salted.
This easy pie is very tasty due to the white onions and frozen veg mix. The soup base compliments everything.
Its one of the dishes I did for the Hi Tea Buffet and one of the first items on the menu that disappeared within one hour!

yes..more work. If you use potatoes, you have to cook it with the skin on, in hot water for 15 mins. Remove the skin, mash it manually, add salted butter. The salt in butter helps to flavour it. And butter makes the mashed potatoes more tasty and will turn into a nice golden brown when its baked.
For ease, I use mashed potatoes powder.
This recipe was published in Food and Travel magazine in 2006. Can't remember which issue it was. And that recipe, I have added shredded cheese into the mashed potatoes too.  _________________ Gina

About 12 cups. But the cups I use have 2 types, deeper ones and the more shorter ones too. Its between 12 to 18 cups. _________________ Gina

I tried making this pie today by using your recipe for the filling and hugbear's recipe for the pastry and it turned out very well. Thanks Gina for the simple and yet tasty recipe and also to hugbear too.

thanks. But the topping is a bit pale and looks a bit more hard. My girls like it more creamy so I add more hot water. One other thing you can try is to add shredded cheddar cheese into the topping filling..and stir. then spread on the chicken later to bake.
gives it that nice cheesy topping taste which most kids loves.  _________________ Gina

Hi Gina,
Ya .... the topping a bit pale, just realise, I forgot to add the butter on the mashed potato.
