Natasha SMS me at 12:30pm to say she is bringing friends home for lunch. Was frantically finding something quick and easy to bake. But I didn't have all the ingredients I needed on hand, and it was raining cats and dogs too. So i used whatever I had and made this. Yummy!
Ingredients:
2 medium potatoes(skinned, sliced thinly like potato chips)
1 cup shredded cheddar cheese
1 large white onion
2 eggs
150ml Thickened Cream
150ml milk
3 tbsp butter
Method:
1. In a sauce pot, add butter to saute onions till soft.
2. Then add potatoes to saute for 3 mins.
3. Pour onions, potatoes and melted butter into a deep casserole.
4. Sprinkle chedder cheese on top.
5. Beat eggs lightly in a bowl.
6. mix milk and cream to egg and stir to combine.
7. Pour cream over cheese.
8. Bake in preheated oven 200C for 30 mins _________________ Gina

Hi,
I would like to ask if I can use those kind of canned mushroom soup (campbell brand) instead of cream?
Is this suitable to use in bento? Cos i tot of making this and bring to school for lunch.. But I'm afraid it might turn soggy..
Thanks! _________________ Baking, has it's therapeutic effect..
