Thai Olive Rice(rec and pic)

I learn to cook this from a Thai chef, someone I know from my past volunteer work with AG Home. Her name, as affectionately known was Auntie Noi. She now works in Oriental Hotel, Singapore.




Dried Black Olives(packing)


from the packing, its halved


Blend it using a food processor before using


Ingredients
4 cups of rice(washed, drained)
2 tbsp of blended salted black olives
60ml onion oil(if not, use peanut oil)
3 tbsp fried shallots
2 tbsp sugar

Coriander leaves for garnishing

enough water to cook the rice in rice cooker

Method
1. Heat up wok with onion oil, add olives to fry to disperse the paste.
2. Add washed rice and fry over high heat for 3 mins, stirring constantly.
3. Add sugar, fried shallots last to stir into it.
4. Put rice into a rice cooker and add water to cook.*
5. When done, fluff up the rice, serve hot.

I use MW Oven to cook my rice.
For 4 cups of rice, I add 4.5 cups of water
Into a Corningware Casserole, covered.
MW on HIGH(100%) for 25 mins.
When its done, remove and fluff up the rice with a pair of chopsticks.

Gina, looks nice. Where to get the dried salted olives? Do we need to wash off the salt?

no, I didn't wash it off. if you notice in my recipe, I didn't add salt, only sugar. To balance the taste and flavour.

You can buy this dried black olives from Victoria Street Wholesale centre. I can't remember how much a packet costs. But its not above $5. Can be frozen for a long time.

Gina, can this olive be eaten with white porridge?? Alfie says he misses those good old days when his mom used to buy olive and go with porridge. But I don't know what kind of olive he's talking about..
