I tried the recipe last evening using fresh berries.
It turned out well, except that it's alittle to sweet (cos I added 2-3 more tbsp of sugar) on top of the 1/2 cup that the recipe called for. I used Bulla's mixed berries yogurt & it taste very sour so worried about my muffins being sour n not sweet, that's why I added more sugar (my mistake)
Other than that, it's taste nice, it's spongy N gives of the eggy fragrant/ taste.

I like to share the above recipe as I made a batch yesterday. My husband who normally is not keen on cakes actually loved it. Not sure if you are able to purchase fresh blueberries in Singapore.

Muffin is one of my favourite snacks. It's easy to make. I baked these muffins last month but forgot to upload it. Now baking muffins is no longer a phobia for me. Hurray! I have overcome the fear. Smile love

Ingredient: (make about 8 mini muffins)
200g self raising flour
1/4 tsp baking powder
60g sugar
1 egg
125ml milk
1/2 tsp vanilla essence
62.5g melted butter
blueberries
chocolate chips

Method:
1. Preheat oven at 180*C (according to your oven temperature). (the original recipe calls for 200*C)

2. Sieve SRF & baking powder together and make a well in the centre.

3. Add in sugar, berries, choc chips & stir well.

4. In another bowl, whisk egg, milk, vanilla together.

5. Pour wet ingredients into dry ingredients, add in melted butter & stir till just combine. Don't overmix. Batter will be lumpy.

6. Sppon into muffin tins until 3/4 full.

7. Bake for 25-30 mins.

8. Leave muffins in tin for 5 min before cooling on wire rack.
