Some recipes call for DOUBLE cream, SINGLE cream, HEAVY cream, or LIGHT cream. What would be our 'local' susbstitutions for these cream?

If I go to PH to buy, they have mainly 2 types of cream - Milac or Red Man Whipped Cream. I was told their Red Man Whipped Cream is equivalent to 'Non-Diary cream', whereas Milac is 'Diary cream'. My own observation is : Non Diary cream is sweet (so need not add sugar), whereas Diary Cream is non-sweet.

A bit confused by all these creams, but depending on what I bake, I sometimes substitute them with milk. However, there is a ganache recipe I came across that specifically ask for Heavy cream and DO NOT substitute with SINGLE cream or milk.

Here's a basic overview of the different types of cream as far as I understand:

Single cream or light cream
These two are pouring cream (for cooking usually or pour over dessert), they cannot be whipped as their milkfat is usually less than 30%, typically around 20%.

Heavy cream, whipping cream or thickened cream
These three are almost equivalent, all have milkfat around 35%.
Heavy cream is a pure cream, no other additive in it.
Whipping cream or thickened cream are both the same thing, but with a thickener added (usually gelatine) to help it whip up faster and not melt easily. Whipping cream is an American term, thickened cream is an Australian term.

Double cream
This is a pure cream with milkfat of usually over 40%, typically about 45-48%.

I have a clearer understanding too.

I bought UHT whipping cream to use for ganache. It says to use within 3 days of opening. Is there any way I can keep it longer? How do I know if it is spoilt?

Anyone can recommend some recipes for me to use finish is cannot keep longer.

It has been quite sometime since your post. Not sure if you still looking for answer =p

If you buy the red man whipping cream, unused portion can be frozen again, and keep for future use.

I used all the balance whipping cream to make whipping cream bread. Or you can use it to make the sponge cake that Gina has posted in this forum.

Hi coolcookie, hahaha......I wasn't sure what to do with it so put it in my freezer. And it has been sitting there since. As it is a dairy cream tot of making ice cream, but no time yet. Hope to use it up soon if it is still in good condition. so how?

Just check the expiry date & instruction on the carton. SHould be able to keep for sometime.

Only non-dairy whipping cream can be frozen. For dairy whipping cream, once open, I always try to finish up within 3 days.

sorry, i need some clarification. does it means that when i see heavy cream in the recipe, i can safely subsitute it with whipping cream?

How abt the Nestle Cream that we see in supermarkets, are those heavy cream too? cos it doesn't indicate on the can.

till now, i haven't seen any light cream/double cream around in supermarkets. maybe i'm so suay that everytime i go buy ingredients, they don't have light cream/double cream already.. sad

To know whether it's a Single or Double Cream, look for the milk fat content.

I'm sure most of the dairy products have it listed as m/m or m/f.
