Grilled Prime Ribs in Cointreau

Ingredients
6 pcs Prime pork ribs
300ml Cointreau liquor
100g dark sweet cherries(canned S and W type)
1 tbsp sichuan peppercorns
3 tbsp sugar

50g salted butter
1 clove of garlic, chopped

Method
1. In a large glass container(like casserole), drain cherries and soak in liquor for 1 day. Add ribs, peppercorns, sugar to soak for at least 6 hours.
2. Heat griddle pan with butter and chopped garlic till it sizzles.
3. Add ribs to grill for 5 mins on each side.
4. Pour in marinating liquid and cook over low flame for 20 mins.
5. Remove and grill in preheated oven 240C for 15 minutes till its slightly burnt and golden.
6. Slice ribs into thin layers. Garnish over a plate of tomatoes and cucumbers.
7. Drizzle the cooked sauce over it.

Hi Gina,

Do you know what is the prime pork ribs is called in Chinese?

It looks as though it's boneless.

It's quite difficult to tell the butchers here in English. Unless we go to the speciality shops.
