Got this recipe from a friend. I like making these especially when the weather is kinda cold and rainy... or winter time. Smile Its quite gingery (a taiwanese friend says tastes abit like ginger snaps, but with a stronger ginger taste). I baked alot of these during December and gave them as xmas presents! Smile Oh, and this makes about 50 or so cookies when i use a small cookie scoop.

Ingredients:

3 cups all-purpose flour
2 teaspoons baking soda
1 1/2 teaspoons ground cinnamon
1 1/2 teaspoons ground ginger
1/2 teaspoon salt
1 cup butter or margarine
1 1/2 cups packed brown sugar
1 large egg
1/3 cup light molasses

Preheat oven to 350 degrees F. (I think that's 180 C)

Combine the flour, baking soda, cinnamon, ground ginger, and salt in small bowl.

Beat the butter, sugar, egg and molasses in large mixer bowl until creamy.

Gradually beat in flour mixture until well blended. Drop by rounded tablespoon onto ungreased baking sheets.

Bake for 9 to 11 minutes or until cookies are lightly browned. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

Eat and enjoy!

Jasie,

can I ask if the batter is soft or firm? 'cos I'm looking for a ginger cookie recipe that I can roll and cut shapes.
