Hi,
I love the mango salad so I asked my SIL to teach me. It is very easy and healthy. This one no need to pound.

THAI GREEN MANGO SALAD

(1) 5 chilli padi (sliced)
(2) 6 small mango* (very green and raw so this is very sour) (shredded)
(3) 3 tbsp dried prawns (washed in hot water. Do not soak)
(4) 9 shallot (sliced)
(5) 1 tbsp unsalted roasted peanuts

Seasoning:
3 tbsp brown sugar
3 tbsp cane sugar
fish sauce

Mix seasoning together till sugar are melted. Add (1), stir it then gradually add (2), (3), (4) and finally (5) one at a time till well mixed.

Note:
* the small mango is about 7 cm long, very sour. If you get those medium size ones, it is not very sour so either you cut down on sugar or add lime juice.
** substitute with red dried chilli. The MIL fried this with ionized salt and keep it in refrigerator. When needed, pound it till smashed and proceed.

that's the recipe for Thai Green Mango salad. yummy Green Mango from Thailand are not really that sour..just unripe, hard and crunchy.
