the big mushrooms are the ones I used.


Ingredients
2 giant flower mushrooms(soaked in water overnight)
1/4 tsp salt
dash of ground white pepper

Batter mix
100g glutinous rice flour
50g wheat starch
100g plain flour
1 tsp Double Action baking powder
180ml water

Method
1. Slice mushrooms into thick long strips.
2. Marinate with salt and pepper.
3. Mix the batter together in a bowl and stir till there are no lumps.
4. Leave it aside for 15 mins
5. Heat up wok with corn oil, dip each mushroom into batter
6. Deep fry till golden brown.

Notes
You can use fresh shitake mushrooms or other types of mushrooms for this.

You can dip this in regular chilli sauce, or mayo or even the Japanese Teriyaki sauce.

If I fry in the morning, then will the mushroom turn soggy and soft in the afternoon?

If I keep in a thermos, it shouldnt soften right?

these snack is meant to be eaten while its hot..not meant for long periods. Cannot cover it or water vapour will dampen it.

in Singapore, these are sold as snacks..eaten straight away. yummy

If you want to keep so long, then just pop it into the toaster oven or electric oven to grill for 5 mins.

hi,
may i know if are white pepper refering to those normal pepper that are sold in the supermarket?? and that is it a must to have double action baking powder??
i was thinking of using baking powder to replace that as i have a whole bottle of baking powder and i simply can't use finish that bottle..yet baking need it..but in small amt =X
