Hi Spots

Hong zao chicken is cooked using Hong zao wine lees (红糟) and wine. It is a mixture of red yeast, wine yeast fermented together with glutinous rice to make wine. I have the recipe on my blog. I learnt how to make the wine on KC. And if you need the wine lees and wine, I do have some to spare.
