Hej Simonne

I am 1 year late in trying this recipe.
Made it today for afternoon tea.
The cupcake was very soft and fluffy but I find it too oily.
I could feel oil stained on my fingers after eating the cupcake.

Do you think I can cut down the butter and still maintain the fluffiness ?
If yes, how much to reduce and what should be added to balance the recipe ?

I just tried making the cupcakes this afternoon. It was really light and fluffy. Didn't taste the lemon though. Thought it would be good to have a bit more sourish taste. Do you think I can add more lemon juice and rind into it?

Finally got down making this in a round baking pan measured 20cm,double the recipe and increase baking time to 35mins.It was light and fluffy as expected,its a keeper for me, thanks.

I happen to own the book by betty saw and made these cupcakes recently. The texture is much softer than usual butter cupcakes, almost as soft as sponge cakes. Really good and simple!

other cupcakes from this book turns out quite well too, like the chocolate rum and raisin cupcakes.
