In celebration of Deepavali. or my excuse to rid of some excess Earl Grey Tea powder bought last month for class use. grin

Customers who visited me yesterday got a sample of the cookie. Everyone was amazed and surprised to hear that there is no egg, butter or normal plain flour used..!

Just baked..


Piped out..ready to go into the oven.


Earl Grey Tea Cookies- VEGAN
Recipe By Gina Choong


Makes 36 cookies

Ingredients
220g Rice Flour
250ml Sunflower oil(or regular corn oil)
100g light brown sugar
2 tbsp Earl Grey Tea Powder
2 tea bags of Earl Grey Tea leaves

Method:
1. Mix all in a bowl and stir till it forms into a smooth and soft dough.
2. Put into a piping bag with a star tip.
3. Pipe straight onto a baking tray
4. Bake in preheated oven 170C for 25 mins.
5. Remove to cool before storing in jars.
6. Goes great with weak tea or coffee!

hi gina!

earl grey tea powder - now does this dissolve? or is it the actual tea itself - let's say if you were to open up a teabag and use it?

do you think it will be ok for a 4yr old seeing the caffeine in tea?

if not - what do you think i can sub the tea with? strong in taste?
