1 pkt regular active dry yeast (11g)
31ml warm water (40.5 to 46 deg F)
63ml honey

2nd attempt, 2 loaves.

This was an amount of dough that I've never handled before. 1.8kg! It was a tight squeeze on my regular work surface, a wooden chopping board.
