The recipe was from my late granny's. I have modified it to reduce sugar, flour and something else.

Here's my tried and tested recipe for you to try

Ingredients
3 eggs(about 55g each minus shell)
35g fine sugar (you can add up to 50g if you prefer it sweeter)
75g Cake flour

Method
1. Put eggs, sugar in a mixing bowl.
2. Using a cake mixer's balloon whisk, turn it up and whisk on high speed for 10 mins. Or until the batter foams up to 3 times its volume.

*I am using a KA mixer, so the dial was turn upto 7.*

3. While the mixer is still whisking, pour in the flour slowly at the side of the bowl.

4. Continue to whip for 2 mins..turn off.
5. Line a colander with glass paper and pour the mixture into it.
6. Steam over high heat for 25 mins.
7. Remove to cool, serve cooled.

Notes:
Cake Flour is low gluten flour. If can't get/find, just replace with All Purpose Flour(Plain Flour)

Do you slow down the mixer when adding the flour?
