|Har Jiong Kai/Prawn Paste Chicken Wings
Original recipe was by KF Seetoh(Makansutra), which I tried and whole family ate one pc and never touch it. :( So I modify his recipe and came out with this. Then after dinner, all had to fight for it. Nothing left.
Here's my tried and tested recipe
Prawn Paste Chicken

18 pcs chicken wings
1.5 tbsp fine shrimp sauce(Lee Kum Kee)
2 tbsp sesame Oil
1 tbsp Chinese cooking wine
2 tbsp sugar
1 tbsp corn flour
100g tapioca flour*
1. Mixed chicken wings with marinating sauce and keep in a ziplock bag for 1-2 hours.
2. Dip wing in egg then coat evenly with tapioca flour.
3. Fry till golden brown, serve hot
Original recipe uses plain flour. I find the chicken too hard due to the crust on the chicken that is form by the plain flour. So I subs it with tapioca flour. Makes it nice and crispy..for a much longer period, timing.
