A dish my mom used to cook for us every week. Comfort food for us all. Simple, delicious and with its nice soupy gravy on warmed rice.
2 pcs of Loofah Gourds, peel, cut into strips
2 eggs, beaten
6 pcs of grey prawns, peeled and devein
1 tbsp Light soya sauce(I use Japanese Soya sauce)
1 tsp chopped garlic
1. Heat up wok with a little oil and add beaten eggs to fry. Once cooked, scrambled/cut it with the spatula. Remove from wok.
2. Add 1 tbsp of cooking oil, add garlic to saute till fragrant and add prawns. Stir fry for 1 min and add loofah strips
3. Stir fry for 2 minutes on high heat then add soya sauce and water.
4. Add eggs now and continue to cook till loofah turns soft ..give it a good stir in the wok, then dish out to serve.
