|My mom's favourite dish. A dish I learnt from her eons back.
200g pork liver
1 inch young ginger, cut into shreds
2 tbsp dark soya sauce
1 tbsp sesame oil
1 tsp light soya sauce
1 tsp sugar
100ml milk(any type, I use UHT full cream milk)
1. Slice liver thinly and soak in milk for 20 minutes.
2. Wash away the milk and lightly run tap water over the liver slices till the water run clear.(not pinkish white)
3. Heat up wok with cooking oil and add ginger slices to saute till fragrant.
4. Add liver slices and rest of seasonings and stir fry at high heat for 3 to 5 minutes till cooked.
5. Serve hot..
About soaking pork liver in milk.
Its a trick I learnt from a chef friend. Said to tenderise the pork and also to remove smells. I found it to be so true.
