This is done in a jiffy like under 10 mins! Its Buay's fusion salad recipe which I use but omitted all the Indian spices and added Thai style of making pickles.

this is how the bunga kantan looks like. Use only the pink bud.



Ingredients:
2 small cucumbers(these are baby cucumbers..imported from Malaysia)
1 large cucumber(regular ones)
1 carrot
juice from 6 large green limes
Grated lime rind from 3 large green limes
1 bunga kantan(chopped finely)
4 pcs chilli padi(chopped finely)
3 tbsp sugar

Method:
1. Sliced the small cucumbers.
2. Shred the large cucumber and carrots into long strips
3. Mixed the juice with sugar, stir to dissolve.
4. In a mixing bowl, add everything together plus the juice.
5. Toss to mix evenly.
6. Leave it the fridge to cool.

How to Serve:
This goes great as a salad by itself or as an appetizer before a main course meal or even to be accompanied with a rice dish.

Notes:
You can use Green unripe Mangoes instead of cucumbers or carrots. Or even the 3 different colours of Bell Pepper. Just shred it.
If you can't find bunga kantan, you can use fresh Coriander(cilantro) leaves.

Thanks Gina ...only one thing my kids dont really like chilli padi (i know thats the one gives it a real kick) any suggestions ???
Would it be ok if i also add roasted and ponded peanuts over it ???what do u think ..?

yes, I know about that too. my 2 girls are not chilli fans too. about peanuts, yes. just briefly ground them and sprinkly on top. But not to soak it together with it.

to ground them, just put a handful of roasted peanuts in a bag, bound with rubber band and hammer it with a large cleaver knife.

Tried this salad today! Very crunchy n nice. The flower bud added a very unique fragrance! Will make this again soon.
