|I like this salad as it is easy to prepare. It also has a nice vibrant colour so it looks nice on a dinner table! I find this a big plus when I have guests over and want to make my spread look presentable. Again, sorry! No pics yet till I have my own kitchen!
Carrot & Sultana Salad
1. Grate 3 carrots in a bowl. Add 1/2 cup coarsely chopped pecans/walnuts, 1/2 cup sultanas and 2 tablespoons chopped flat-leaf parsley.
2. Whisk together 1/4 cup olive oil, 2 teaspoon honey, 1/2 tablespoon lemon juice, a pinch of ground cinnamon, salt and freshly ground pepper to taste.
3. Pour dressing over the carrot mixture and mix well. For a different flavour, add fresh grated ginger to the dressing.
