My friend that works at one of the japanese restaurent in Oregon gave me this recipe... Its abit modified to my taste so adding more/less of the ingredients to taste is good! I never knew that adding peanut butter to salad is good.. but hehe, it really is! Quite easy to make too since alot of these ingredients we already have at home. Smile

Ingredients:

3 tablespoons soy sauce
3 tablespoons brown sugar
2 tablespoons minced fresh ginger
1 1/2 tablespoons minced fresh garlic
6 tablespoons rice wine vinegar
5 tablespoons vegetable oil
1 tablespoons sesame oil
5 tablespoons creamy peanut butter

(optional) Chopped green onions/scallions/spring onions. I find that adding this gives it abit of "kick". Cilantro works too!

Just mix everything together in a bowl with a whisk.

Pour over salads or mix with shredded cabbage/carrots etc for coleslaw.

I also use it to marinate chicken or seafood sometimes and then grill/fry it. Smile
