The recipe is from Philadelphia Cheesecake Book.

Mini Cheesecakes

Ingredients
1/3 cup graham cracker crumbs
1 Tbp sugar
1 Tbp margarine, melted
***
1 package (8 ounce) cream cheese, *room temperature*
1/4 cup sugar
1 1/2 tsps lemon juice
1/4 tsp vanilla
1 egg *room temp*

How-to:
Combine crumbs, sugar and margarine. Press rounded measuring tablespoonful of crumb mixture onto the bottom of each of six paper-lined muffin cups. Bake at 325F (170C) for 5 mins.

Combine cream cheese, sugar, juice and vanilla, mix until blended (don't over mix). Blend in egg; pour over crust, filling each cup 3/4 full. Baked at 170C, 25 mins. Cool before removing from pan. Chill. Top with fruit preserves or fresh fruit just before serving.

nora, you're welcome.

Rachael, about 2 dozens. Since they're so tiny, one adult could eat 3 or 4 at one go.

Hi Giselle,
Do you think I can just put oreo cookies into the paper cup as the base? Without crushing it?

Thanks Gina and sorry Edith... that time I still used modem and so my photo account run extremely slow, that's why I got to delete some photos. But now I have broadband, just upload it again.

Karrine, sound like an interesting idea for mini-size, but work or not really needs to try out... sorry I haven't experienced it yet.

did they crush the cookies then?
Would like to remind you, this recipe is for "mini" muffin cup, the base's dia. is 3cm only. Don't know if a whole oreo can fit this size.

Yes, that recipe is also for mini cup cheesecake, something similar to yours & they did not crush the cookies.
Anyway, will see how it goes & prob. just put in the oreo without cream.
Thanks Giselle!
