These panellets are a kind of sweet biscuit type or morsel done during the religious festival in Catalonia/Barcelona (Spain)


INGREDIENTS:
300 GRAMS Almonds peeled and ground
300 GRAMS sugar
2 sweet potatoes (medum) boiled and mashed or plain potatoes
2 egg yolks.
2 egg white.
some panellets have lemon o lime zest to the mixture

Mix well and make a dough out of all the ingredients above less the whites that you should reserve for painting the panellets
Make small balls and shape according to the type of filling or topping you want to add brush with lightly beaten egg white or press some almonds and baked in a preheated hot oven for 10 minutes
I cant give you a shape but if you google for panellets images you'll get the ideas

no fat is called for in the recipe?
Interesting, can interchange sweet potato and plain potato...

lemon panellets

Ingredients:
- 1 kg. sugar.
- 1 kg.. ground almods
-. 250 ml. water.
- 2 large eggs.
- 2 lemon zested .
- 80 gr. sugar.
- sugar powder.


Method:
with sugar and water make a very thick syrup and pour it over the amond meal. Mix it quicklyu. Add eggs and mix it thoroughly. Move the dough to a work bench en let it cool. Preheat the oven to180

Ricardo, did the first one! Tried to do background search on internet but most info written in spanish. Anyway, the texture of mine kinda crunchy but slightly chewy inside... hope it's right.
