There are times when I am pressed for time and just don't have the energy to prepare elaborate meals. My husband and daughter like sandwiches and this one has been a big hit! I got this from a Periplus cookbook. I don't have a pic yet but if anyone of you try this, I hope you can take a snapshot!

TUNA SALAD
1. Drain a 425 g can of tuna.

2. Break up the tuna with a fork and combine with:
* 2 chopped hard-boiled eggs
* 3 chopped spring onions
* 2 teaspoons grated lemon rind
* 1 chopped celery stick
* 1 tablespoon chopped flat-leaf parsley
* 1/2 cup mayonnaise
* 1/4 cup sour cream
* Salt & freshly ground black pepper to taste

3. Serve with lettuce leaves on bread rolls. I also like to include sliced cucumbers and tomatoes in the sandwich. Steamed carrots on the side are my daughter's favourite!

i did this for party yesterday. i did with spicy tuna which gave it a kick and also i skipped the sour cream! nevertheless, yummy!

There is also another version in my country called "ensalada rusa" or Russian salad which it has nothing to do with Russians but the name
Foodnetwork features one version though does not include tinned tuna but ours does so you may like to try that one out Ensalada Rusa and add tune chunks and add some freshly squeezed lemon juice to it too that's how I used to eat it back then http://www.foodnetwork.com/food/recipes/recipe/0,1977,FOOD_9936_15031,00.html
