can leave them in the jar. only when you want to eat, then remove it from the jar. The jar can be kept on the kitchen table top. no need to freeze. Fermentation needs a cool dry place..not cold, not hot.

the longer you keep the eggs inside the liquid, the better the flavour of the wine.

the next round, i want to use my Hong Chao wine which I made in August..ready to harvest that soon.

Do you boil the water first and then put the eggs in for 4 mins or do you straight away boil with cold water for 4 mins ? Thanks

boil water first..then add eggs. If you do the latter, eggs will break..or may overcook

I found mould growing im my drunken eggs. This is the second time. The first time nearly the whole surface was covered with it. Now, the second time, bits of it here and there. What happened ah? Anyone knows?

inside the egg or on the surface(the shell)? don't crack the egg till it breaks. just enough to break the shell.

For the chicken eggs I made the other day, it has some mouldy tissue like substance attached to the shell. I just wash it under the tap..then peel and makan!

does the liquid smell like moldy stuff? if not, i think its natural substance.

I have finished all the eggs during a family gathering on Tuesday evening. So far, none of the eggs have that mouldy thing. Anyway, I thot the alcohol would be strong enough to kill all the mouldy stuff.

The first time, some of the shell broke a little. The second time I made sure I tap them gently. There's no moldy smell this time though. The moldy stuff seems to be floating on the surface. I'll wait till Monday when it's ready for harvesting and see what happens.

oh like that..the book did say about this too. Just scoop out to throw away. in the book the white stuff floating on top is called 'scum"

Gina please help:
I did my eggs 7 days ago but when I tested one-- the egg yolk was just liquid and while most of the egg white was firm there were still parts next to the yolk which are gell-like. I had a lot of sake n shio hsing wine 3 1/2 cups to that 675 ml water ( mistake) -pretty strong alcohol flavor . I cooked the eggs exactly 4 plus 1/2 min more as they were pretty big eggs. Am I suppose to cook the eggs again before eating???

the yolk in the centre must be cooked..firm. however, the sides of it between yolk and white may be liquid and soft, that's okay. the egg is supposed to taste like alcohol..which is correct.

after harvesting it from the wine jar, can just eat straight away. If you cook it, it loses it liqour flavour and Drunken Eggs must call it Sober Eggs island
