I used Florence's Chilled Lemon Cheesecake recipe to make this. And modified it to use Fresh Strawberries. coffee For reference, do check out the recipe she posted.



Makes a 18cm(7 inch) cake
Ingredients for the base:
20 pcs Oreo cookies
40g melted butter

Filling:
225g cream cheese (room temperature)
30g castor sugar
100ml whipping cream + 1 tbsp icing sugar

Blend till smooth, using a food processor:
20 pcs of fresh strawberries, remove leaf/stalk
100g icing sugar

1.5 tbsp gelatine dissolved in 3 tbsp water

topping:
3 strawberries, cut into half.
2 tbsp chocolate rice(optional)

Method:
1. Mix crushed oreo cookies and melted butter.
2. Press mixed cookies onto the cake pan
3. Chill for at least 30 minutes.
4. Whip whipping cream with icing sugar till mousse state.
5. Beat cream cheese with castor sugar till smooth.
6. Add strawberry puree and gelatin solution. Mix well.
7. Stir in whipped cream. Mix well. Pour the mixture into the chilled cake base.
8. Refrigerate for 15 minutes and top with cut strawberries.
8. Refrigerate for 2 hours before serving.

Notes:
If you check Florence's recipe, amounts of castor sugar is lesser here as I have added icing sugar to the strawberries. and also added extra 0.5 tbsp of Gelatine powder.
