Chestnut flour in italian it is called farina di castagne and in Spanish harina de castana
Both countries use it veru heavily for a mirad of things though I picked this recipe
300gr. chestnut flour
200gr. flour 00
5 large eggs
salt

oh good..BIY sells Chestnut Flour too. now at least can buy a pack to try this.

Gina, a few other shapes of pasta can be done by hand beautifully (assuming you not ready for investing a machine), unless that flat thin noodle shape is a tradition... well, just a thought.

I can buy durum wheat, besides of chestnut flour, here easily, is it even better than farina 00, Ricardo?

Honestly don't know giselle I have not made this but simply it caught my attention. The pasta in the pics looks pretty good to me.Taste wise? Wwell.. have to try it one day but chestnut flour is expensive here.

chestnut flour is not cheap here either ... same as chestnuts too! Don't worry, I'll try durum wheat alone in other recipes, let me understand its character.
