Hi everyone!

I just joined last night and today I made a chicken pie. Would like to share with you Smile First time I made this Embarassed

Chicken and Mushroom Pie

Ingredients

Filling
1 large Roast chicken breast, shredded (I use leftovers )
200g Fresh white button mushrooms, sliced
1 cup frozen peas, cook 2 min in microwave till deforsted.
1 cup instant mash potato flakes
(follow packet instructions to make enough for 2 persons)
(I added chicken stock and milk to form the mash)
2 cloves garlic, minced
2 stalks spring onion, chopped
Black pepper
Garlic and herbs salt
2 tsp corn flour
? cup milk
2 to 3 tbsp cream
1 cup Grated cheese

Crust
1 ? sheets Pampas frozen shortcrust pastry
1 ? sheets Pampas frozen puff pastry
1 egg for glazing

Method.

Heat some olive oil. Saute garlic.
Add in mushrooms and fry. Season with garlic salt and pepper.
When mushrooms are almost done, sprinkle cornflour.
Continue stirring till corn flour disappears.
Add in cream and milk.
Stir till thickens.
Add in defrosted peas and shredded chicken.
Stir in cheese.
If too dry, add in some more milk.

Line family size pie dish (I use pyrex) with shortcrust, leaving 2 cm crust hanging over.
Pour in chicken filling. Spread to sides.
Spoon mash potato over the chicken filling.
Cover with 1 sheet of puff pastry. Pinch the shortcrust and puff together.
Trim away excess pastry.
Use half sheet of puff pastry and cut out leaf shapes to decorate top of pie.
Glaze with egg wash and pierce some holes all over the puff cover.
**Remember to pierce only after glazing, or else the egg wash will seal the holes.

Bake at 220deg for about 15mins (Until pastry is golden brown.)

Thanks Coxiella! It's great to have someone view your receipes and admiring the pics:)
There's so many recipes here that I don't know where to start!

As I am staying in Perth now, my strongest urge is to make the kuehs as I really miss eating them:)
