Playing with Pasta Machine again. This time, I just wanted to try adding Wheat Starch into the flour mix as suggested by Pauline..gosh..the noodles almost fooled hubby and he thought it look like the ipoh hor fun coffee :shock:

the noodles was rich in Carrots flavour, very smooth and silky. I did this without eggs or oil in the mix.

You must try this.. !

Pauline said that if I just use lots of carrots and NO WATER, the noodles will have more Orange colour in it.

I added water to the carrots for blending/puree.

This is how soft silky it looks after a brief hot water cooking


I cooked a simple Tom yam soup base, added the noodles to it and other ingredients.


Fresh from the Pasta machine


Ingredients
350g Top Flour
50g Wheat starch
2 carrots plus 250ml water
1 tsp salt

tapioca flour for dusting

Method
1. Mix top flour and wheat starch together in a mixing bowl.
2. Add water to carrots and puree till liquid.
3. Add salt to mix with the carrot juice.
4. Mix with the flour and knead briefly to form a dough.
5. Break into smaller portions to run thru the machine until it comes out smooth.
6. Run it thru the cutters.
7. dust with Tapioca flour to prevent it from sticking together.

Notes
I only had 2 carrots in the fridge. If you can, just add more carrots to puree without water to get a pure carrot juice. Make sure this juice measures upto 250ml for this recipe.

Looking forward to that Very Happy Just one question of the carrots noodles, carrot is very fibrous right? But it certainly does not show in the noodles :roll:

becoz I added water to make up to 250ml. Should just use carrots, blend and get just juice.

Yup. If use mostly carrots, you would have orange colour noodles which wets the appetite more. Nice pictures. Maybe you should start a Video blog Gina Smile
