This is just an estimation, add more or less to suit your taste.
Ingredients
4 medium potatoes (with jacket), washed thoroughly and cut into chunks
1/2 tbsp sambar/vegetable curry powder
1/2 tsp heapful tumeric powder
1/2 tsp garlic powder
1/2 tsp ginger powder
1/2 tsp amchur (mango powder)
1 tsp sweet paprika or chilli powder for spiciness
pinch of salt
2-3 tbsp olive oil
coriander leaves, chopped
Method
1. Parboiled potato pieces until half cooked, drained and shake them abit to make them fluff
2. Mix all the other ingredients except coriander leaves to the potatoes and mix them until well incorporated
3. Line a baking pan with aluminium and arrange the potatoes onto the pan
4. Bake the potatoes in a preheated oven of about 200C for 30mins
5. Once crispy, add chopped coriander and mix well
6. Serve hot |

I got this from the indian shop at my place. You definitely can get it at Serangoon or Mustafa centre. The powder is called amchoor or amchur.

its near to the Megar Department store(the one that sells pots and pans). I used to post their shop details here. Have since deleted that coz I never go back there to buy Indian spices..my place downstairs have it.
they sell a lot of Indian and Malay spices there. A bit like mini Mustafa for spices/herb stuff.
Its a shop..not inside the market. So they are open from 8am to 9pm. _________________ Gina

Zu, love this dish! And love your idea of half-boiled the potatos first, so I could do it whenever I had time and kept in the fridge, next day I just finished up the dish real quick! The flavor is really very good!
But since my oven is fairy big, so I pan-fried them in order to save $ on fuel . In order not to "disturb" these little guys, I didn't use spatular, I moved my pan and let them toss in it.

Zu,
Made your potatoes for dinner tonight. It is so yummy. I made it with 5 potatoes and my hubby whack most of it leaving me only a few pieces. I was eyeing the last piece on the plate but he was faster than me. Thank you for such an easy and delicous dish. This will be on our dinner table often.  |

My family polished off this dish in record time! I didn't have sambar powder and amcur. Squeezed some lime in place of the amcur. Also added some cauliflower to cook together with the potatoes. Thanks Zu! |
