I used the recipe from Krafts Food website. But modify as i do not have leeks. I used white onions instead.




For the shortcrust pastry, pls refer to my Chicken and Ham Quiche recipe

Recipe serves 4 persons
Ingredients for custard base:
185g Philly Cream Cheese
120ml Thickened Cream
2 eggs(beaten)
1 white onion(chopped)
200g Salmon(chopped)
1/2 tsp Oregano (Dried)
1/2 tsp Rosemary (Dried)
1/2 tsp Dill Leaves (Dried)
50g butter
dash of ground white pepper

one portion of shortcrust pastry dough(see link above for recipe)

Method for custard base:
1. Mix cream cheese, egg and cream together.
2. Use a hand whisk to beat the egg till its fused with the milk and cream.
3. Set aside.
4. Saute onions in butter till cooked or transparent.
5. Add salmon and herbs to fry briefly. Once it turns pink, turn off the heat.
6. Mix salmon with custard. Stir to mix well.

Method to put everything together:
1. Pour custard in the pastry: 80% full.
2. Bake in preheated oven 170C for 15 mins
3. Remove to cool before cutting.
4. Serve warm.

Hi Gina,

I love quiches and I'm glad to have this site. Just before I start trying your reciepes, I've got a few questions.

For the shortcrust pastry, can I use Lo-Fat milk instead of UHT milk?
For the salmon quiche, what kind of salmon do I use? Fresh or canned?

hi

about the low fat milk, i think should be okay. But I am not very sure. Embarassed

for the Salmon, its best to use fresh salmon. the taste is better. Also, the meat is softer. If you used canned salmon, the meat is a bit tough.

Hi Gina,

Sorry, need some more clarification. How to cook the salmon? Assuming I buy a piece from the supermarket, do I chop it first or pan fry the whole piece?
