Ingredient
4 egg yolks
115ml water
85ml corn oil
1 tbsp rum or 1/2 tsp vanilla essence
1/4 tsp salt
50g sugar
150g flour
1 tsp baking powder

4 egg whites
40g sugar
1/2 tsp cream of tartar

Filling
400ml whipping cream
300g canned unsweetened chestnut puree
3 - 4 tbsp icing sugar (test sweetness to your taste)

Method
1. Put egg yolk, sugar, rum into the mixing bowl. Mix well.
2. Stir in the corn oil followed by water.
3. Stir in flour and mix evernly till smooth.
4. Beat egg whites until big bubbles formed, sprinkle in cream of tartar. Beat the white till soft peaks appear add in sugar over 3 times and beat till stiff peaks formed.
5. Add 1/2 white to yolk mixture and mix lightly then add yolk mixture to the remaining white. Mix till combined.
6. Bake at 175C for 40 minutes or until cooked. Remove fromoven and immediately invert to cool. When cake is cold remove from mould.
7. Beat whipping cream till soft peaks formed, then add in chestnut puree and icing sugar over 3 times. Beat until cream is thick and of creaming consistency.
8. Slice cake into 2 - 3 layers and cream each layer with chestnut cream and garnish as you like.

Notes: This is a chiffon cake base and it is very soft and fluffy so handle cake with care.

I usually have the recipe on hand...its the photo of it that I don't have. Yours is the reverse. how come?

thanks Florence. I've tried both these places, and didn't manage to see any. only saw the sweetened version at Carrefour, and bought that, but it was SOOOOO sweet when I opened it to try a little bit, that I didn't dare use it to make the cake as my family don't like cakes that are too sweet. It was really too sweet... my teeth can almost drop off!

really hoping someone can help me with where I can find the unsweetened version. thank you.

Maybe u can try sun lik, I know they do carry chestnut puree.

Hi Alyssa,
Carrie is right. Sun Lik sells Chestnut Puree. I've bought it before. It's like 890g for about $12+ or so. You can get it from there. I've not seen any other supermarket carry this puree too! Hope this information helps. :p
