This is one of those sardine dishes of Spanish or Portuguese origin also very similar to the Italian way of preparing sardines

Right now Western Australian sardines are fresh and plentiful I don't know if available anywhere else sorry


24 sardines cleaned and filleted or less amount
- 1 lemon
- half fennel sliced
- olive oil
- little water
- salt and pepper to taste



Place sardines in a oven baking dish on top of fennel slices add oil, lemon juice, salt and pepper and a little dash of water on a very hot oven for 10 minutes making sure not to dry the fish too much.

Serve hot with lemon slices and hot potatoes

wish I could get them here! Love this!

Isn't it a shame we can't get EVERYTHING EVERYWHERE? :lol:

I know I still miss some stuff from EU after all these years. On the other hand would miss stuff from over here if I were there... Wink

In any case, this is a great way with sardines! :lol:
