In a small bottle or jar we put
fresh red chiilies chopped any amount
good amount of pickling salt(not iodised sea salt)
1 cup of olive oil
1/4 of wine vinegar
shake three times a day for 15 days then it should be ready to sprinkle on seafood, chicken potatoes etc.

You may wonder why I am working on this but it is more than a personal quest it is an obsession :lol:
I have recreated the recipe and two more days to go before proof but it is good version 2 is on production and tonight I had it with thai fishcakes it was good as I compared with Lingham's chilli sauce too sweet for my taste. Mine seemed to come on to with the tasters as the vinegar sauce seemd to work better with these cakes.
