I found this receipe on the internet, but I forgot which website.
My MIL and husband loves it.

ROAST CHICKEN (serves 4)

INGREDIENTS
1 spring chicken (1 - 1.3kg)
1 Tbs light soy sauce
2 tsp dark soy sauce
1 1/2 Tbs sugar
1 Tbsp ginger juice (Or add 1 tbsp of chopped ginger)
1 tsp sherry (Or Hua Tiao Jiu, chinese white wine)
1 tsp honey
1/2 tsp salt
1 tsp pepper

METHOD
1. Marinade chicken with the above ingredients for at least 8 hours (4 hours will do if you are in a hurry).
2. Preheat oven at 180 deg C with turbo if your oven has a fan. Otherwise, just bake it at 180 deg C. Put chicken on a wire rack with a tray below to collect juices and oil. Pour some of the marinade over the chicken and inside the cavity.
3. Bake it breast side down for 45 minutes. Then turn it over and bake it breast side up for 20 minutes.

Thought of trying this.

Before I do, just want to clarify if the chicken should be baked or should it be roasted, since it's called Roast Chicken.

my suggestion for roasting a small chicken:

set the temp to 200C
roast for 30 mins.
every 10 mins, brush/baste the skin with the sauce.

the skin will be crispy, meat tender and cooked. One thing you must remember..MASSAGE the chicken before you marinated. makes a lot of difference to the meat after its cooked.

I cooked this chicken again last week.

This time, I "massage" the chicken before marninating.

I also separated the skin (do not remove) and marinate the meat (underearth the skin) with the sauces.

When the chicken was baking, I apply butter ontop of it..

DH likes it.. Embarassed
