Mango Pickles(recipe and pic)

This is an accidental creation recipe. I bought ripe mangoes only to find out that it was SOUR :( So ended up making it as a pickle. Turn out very nice..wonderful appetizer. Natasha loved it with rice.



Ingredients:
2 to 3 pcs ripe and sour mangoes(remove/discard skin/seed, shredded)
6 shallots(sliced thinly)
3 chilli padi(sliced thinly)
2 japanese cucumbers(remove/discard bitter skin, sliced thinly)

Seasonings to mix together:
3 tbsp Fish Sauce
1 tbsp Prawn Paste(Har Jiong..used for making Rojak)
8 tbsp Sugar

Method:
1. Mixed all the shredded/sliced ingredients together in a plastic container.
2. Pour seasonings into it and cover it.
3. Leave it in the fridge to soak for 2 to 3 hours.
4. Serve cold.

Notes:
Can keep in the fridge for 2 to 3 weeks.
Its yellow because the mangoes are ripe, unfortunately extremely sour.
Its not the unripe Green Mango.

yes..just ripen type. not over-ripe till its gone soft.

sweet mangoes cannot make sour pickles. if not, go and get unripe mangoes which are still green and very hard. Like those they use for the Thai mango salad. Wink

Thanks Gina, but DH bought some green mangoes instead .. i told him that i want ripe but sour mangoes .. his thought was .. how to find ripe but sour mangoes? so he bought those unripe ones .. :cry:
