I also do something similar to what Gina has shared but because my son is basically a meat lover, instead of tomatoes, I will use ham or bacon or salami and the bread used is lite meal bun from gardenia.
This pic shows the salami one. It the same way of doing just replace tomatoes with meat

then I think you cannot call it as Bruschetta the way I understand it is that its mainly had toppings that are no meat..like vegetables or beans.

Yes, guess the pros and 'shi fus' will have a name for it. Teachers of my son and daughter call it Bruschetta when they bring to school, so we all name it as such lor.
