|A neighbor told me the recipe and said they keep easily for a year. I've done the first part (recipe) but haven't done the time test
(I also added some artichoke)
20 oz fresh brown mushrooms (I used baby bella)
2 cups vinegar (I used fruit vinegar)
2 cups water
2 pinchs of salt
3 garlic cloves, halved
some dried herbs, e.g. bay leaves, oreango, peppercons or red chili
1/2 cup olive oil + 1/2 cup extra virgin olive oil
1. clean the mushrooms, stems removed
2. in a medium-small pot, bring water and vinegar to boil, add salt and mushrooms. Once the liquid boils again, drain the mushrooms immediately in a colander, weigh them with heavy things (e.g. big can) to drain out the excess liquid. And let it cool.
3. Boil your jar (mine the size H10cm x W8cm) in water for 15 minutes, dried, pack the mushrooms, garlic and herbs inside, fill with oils, run a knife around the sides to ensure no air bubbles remain. Close the jar tightly and set for at least 6 weeks.
