Hi Gina,

I remember you had one very simple steam chicken recipe.. one of the marinate is DOM.. Can't find my written copy and not here either. I think you posted it in another forum.

Could you pls post the recipe here?

hi annie

oh that.. coffee it was created for my student. She was preggy at the moment and ask me what she can cook on her own which is simple and yet very good for the body.

I would prefer to use a small spring chicken. As it cooks faster and the meat is more tender after its steamed.



Ingredients
1 small spring chicken(remove neck,head and legs)
1 tsp shredded ginger
1/2 tsp salt
1 cup of DOM wine

Method
1. Wash and clean chicken. Rub salt all over the body and inside the cavity. Sprinkle ginger shreds all over chicken.
2. Put chicken in a deep casserole dish and steam over high heat for 15 mins.
3. At around 10 mins, open the wok or steamer and pour the wine all over the chicken.
4. cover the wok and steam.
5. Turn off fire, leave it to stand for another 10 mins before serving.

Hi Gina,

Actually not for my 2 kids, its for my childcare centre. Smile I've ventured into childcare centre and am now running one in Pasir Ris.

But if you can write up a menu for my 2 kids, especially the 1 yr old, I will be VERY grateful!... No food allergies.

Gina,
What is DOM wine I would like to make this. My neighbor has some young chickens for sale(Pre-Butchered, he does it for ya.) and I seen this recipe and thought that it would be nice to try.

Hi Gina,
will you be posting it under Kiddie Food?
Then I'll keep a lookout for it...
Cuz' I'm also at a loss of what to cook for my toddler...
He's attending childcare now and the centre doesnt provide food so we have to bring both lunch and tea for my boy....
Really a headache to keep thinking of providing a variety of food everyday...and still must cook it fresh and fast in the mornin...

Mad rush every morning...

This is my simple one dish steamed chicken :

2 chicken drumstick
2 potatoes
1 carrot
1/2 can button mushroom
1 1/2 bowl water
some salt and pepper to taste

Parboiled the chicken drumstick in boiling water to get rid of the blood and smell. Rinse with tap water.
Put all into a big bowl.
Put the bowl into the steamer and cook for about 20 min.

The DOM mentioned here is DOM Benedictine which is a French herbal liquor. Their website is as follows :
