Recipe was taken from "Thg Great Big Baking Book" by Carole Clements -- my gift from Hubby dearest! Razz

The original recipe was called "Salted Peanuts Cookies". I modified it by changing salted peanuts with Oats and also substituted Butter with Soya Bean Oil(Lam Soon brand)





This is the box of Toasted Oats I used


Ingredients
175g plain flour
half tsp of Baking soda
115ml Soya Bean Oil(Lam Soon brand)
125g light brown sugar
1 egg
1 tsp vanilla essence
120g Toasted Oats

Method
1. Add all the wet ingredients together and stir till well mixed.
2. Add the oats and sifted flour/baking soda to mix
3. Use a cookie scoop or spoon to form balls and place on cookie tray.
4. Bake in preheated oven of 190C for 10 mins.
5. Remove to cool completely on wire rack before storing in air tight containers.

notes
The cookie is very crunchy/crispy. Is mildly sweet. If you prefer it sweeter, add a bit of castor sugar.

Gina,toasted oats=instant oats?
Thinking of using those Quaker Oats type.

sorry..the ones I used are those that comes in a box type. The box says "Crunchy Toasted Oats". I bought that for ice cream..but use a bit for this recipe.

i will try making it later again with Rolled Oats. I think MamaC will have lots of Oats recipe to share too.
