Fairly easy pickles to make. Recipe from a beloved old lady in Kyoto.

Ingredients
1 kg Daikon
1 tbsp salt
50g Carrot
150ml Japanese vinegar
4 tbsp Sugar

Method
1) Peel and julienne the daikon and carrots (I shred them).
2) In a bowl, add salt to daikon and leave aside for 1 hour.
3) Squeeze daikon dry.
4) In a container, mix the vinegar and sugar.
5) Add in the vegetables and let them stand in the fridge for 2 hours. Ready to serve.

Pickles will last for 3 days in fridge.
