Ingredients:
4 pcs of Hard Boiled Eggs

sambal paste:
20 pcs dried chilli(soak in water to soften)
5 pcs of shallots
50g dried shrimps
2 pc garlic
2 tbsp belachan(toasted, grounded)
juice from one green lime
1 tsp salt
1 tbsp sugar

Method:
1. Blend sambal paste ingredients into a fine paste.
2. Heat up wok with 5 tbsp of corn oil.
3. Add paste to stir fry till fragrant using medium heat. (about 30 mins)
4. Remove and set aside.
5. Heat up wok again with 5 tbsp of oil.
6. Add cooked eggs to fry.


7. Fry till eggs are golden brown all around.


8. Remove and cut into half.
9. Add sambal chilli on top.
10. Serve with plain rice.

Hi Gina,

Thanks for sharing this recipe. I attempted this dish during a family gathering and everyone loves it! The sambal was fantastic! grin

by the way...for those lazy cooks like me...you can use Brahim's Sambal sauce for Gina's egg sambal recipe too...just fry the hardboiled egg (cut) & then add the ready-made sauce (some onions if you like). real easy and convenient. Brahim sauces are one of the very best!!! loving u
