Sherry

yes. I have. but I seldom make it. Its very healthy and naturally sweet. But no one in my family likes tomatoes. so weird! I am the only person who loves tomatoes, fresh, raw, cooked, soup and whatever.

I will go and dig my archives for it. Its quite easy to do. the one I did was the clear tomatoes soup type..not the think murky ones like those from Campbells'.

Will post it later.

Sherry, here it is:

Ingredients:
500 g red tomatoes
400 ml water
1 onion(chopped)
1 pc bay leaf
1 tbsp sugar
1 tsp salt

Method:
1. In a pot of boiling hot water, add all the whole tomatoes in for 1 min.
2. Remove the tomatoes and peel off the outer skin layer.
3. using the same pot of water, reboil again.
4. Cut tomatoes into half. Cut away the green part(stalk)
5. Add cut up tomatoes into the boiling water and cook for 20 mins.
6. Sieve out and mash it (or blend it).
7. Reheat the pot of tomato water, adding enough water(if it has evaporated since the 2nd round of boiling)
8. Add mashed tomatoes, bay leaf, sugar and salt.

To serve
Garnish with a pinch of Fresh Thyme leaves(you can get them from Cold Storage at S$1.97 for a bag), dash of pepper. On the side, you can toast a few slices of bread and use as a dip with it.

Notes:
If you like the creamy soup like Campbells' canned version, just add cream to thicken it. Most of the times, I just add milk. Can't be bothered to rush out to a supermarket to get CREAM.

Best to use fresh tomatoes instead of canned ones. Fresh tomatoes are naturally sweetened, no preservatives while canned tomatoes tend to be preserved.
