I started searching for a bread recipe with cream cheese as I've a few boxes of cream cheese in my fridge. I was glad I found this coz it's really very good! Super soft! Personally I like it more than the Hokkaido Milk Loaf (which used to be my favourite).
The original recipe is for a breadmaker. I don't have one, so I use my VM to knead the dough and do it like a normal bread.
Cream Cheese Bread
Ingredients
160g water
250g bread flour
50g cream cheese
10g powder milk
15g sugar
3g salt
20g butter
3g dry yeast (original recipe calls for 2.5g)
For Breadmaker
1. Put the ingredients in the bread machine on regular or fast loaf cycle.
2. Slice and enjoy.
For non Breadmaker
1. Mix all dry ingredients in a large bowl until well blended.
2. Add in the wet ingredients to form a dough.
3. Knead dough until dough is elastic and smooth.
4. Place it in a large greased bowl. Cover the bowl with a damp cloth or cling-wrap and leave it to proof in a warm place till double in size (about 1 hr).
5. When proofing is completed, punch down the bread dough to release the air.
6. Roll out the dough into a large rectangle with the shorter end to be the same length as the length of the loaf pan. Starting with the shorter end, roll up the dough swiss roll style and place it into the loaf pan to proof until double its size again (about 30-45 minutes).
7. Bake in preheated oven at 170C for 30 minutes.
8. Remove bread from loaf pan to cool completely.

Oh yes...I used to think Hokkaido is the best until I bake this.

I am so gonna to try this but i run out of bread flour. Hopefully i can get some flout this weekend to try it out!!

Very tempted to try this but may i ask what is powder milk? is it milk powder? also, do i have to melt butter first if using breadmachine?

octopusmum, yes, powder milk = milk powder. For the butter, I don't think you need to melt first.
I've been experimenting to get a healthier version of this bread without compromising too much on the texture. Let me try for a few more days before I share with you all again. _________________ My baking & knitting journey |

kwf, I just made this bread and turned out very nice and fluffly too... Thanks for the recipe. I melted the butter first before adding. I used the bread machine to knead the dough and later took it out to bake in the oven. _________________ Live life to the fullest, and be positive always...in spite of difficult times... |

How r u? Wondering if u can remember me, we attend the fondant class in Gina place ... ...
Like to know what type of cream cheese u use for the bread? Philadeplhia Cream cheese? This cheese seem like out of stock in the whole of Spore? Any other brand/alternatives?
I try searching for the Anchor Brand, also cannot find!
Please advise. Thanks.

Hey KWF, I'm making the bread now (in bread maker), hopefully it turns out well! Hee
As for the cream cheese, it seems to disappear since months ago. I used cream cheese spread because I can't find any cream cheese. I know spread is not suitable for baking but I don't want to end up buying phoon huat's 2kg block.  |

bakingjourney, that's interesting! I never thought of using cream cheese spread. You'll probably need to reduce the amount of salt coz cream cheese spread has more taste. Let me know the outcome, ok? No, eunice. This is a savoury bread. The orange bread is a sweet one, just like orange juice. Both good in their own ways. You can find the recipe for the orange bread here. Let me know the result if you do try them, ok?  _________________ My baking & knitting journey |

The bread is a little on the salty side (which I like), probably due to the fact that I used spreadable cream cheese. Soft and fluffy like what you said, definitely tasty! I had one slice even tho I'm extremely full, couldn't resist the fluffy bread. =X
