I learnt this from Mayer Marketing in 2005. After buying my KA mixer from them. I only learn the short crust pastry recipe. The fillings was one I got from the NEt but I modify the recipe's ingredients.



Recipe makes 18 tarts
Ingredients Short Crust Pastry dough:
600 g plain flour
120 ml milk(UHT milk)
300 g cold butter(salted)

Ingredients custard base:
8 egg yolks
30 g cornstarch
400 ml thicken cream
100 g castor sugar

Method for Pastry dough:
1. Sift dry ingredients into a bowl.
2. Rub butter in till it resembles breadcrumbs.
3. Add milk slowly and mix till it forms into a smooth dough.
4. Leave in the fridge to stand for 30 mins.

Method for custard base:
1. Mix cream, egg, corn starch and sugar to cream together.
2. Use a hand whisk to beat sugar is dissolved in the mixture.
3. Set aside.

Method to bake pastry dough:
1. Roll out pastry dough and cut out a round shape.
2. put the dough in a disposal aluminium cup.
3. Bake in preheated oven 170C for 10 mins.
4. Remove, set aside.

Method to put everything together:
1. Pour custard in the pastry: 80% full.
2. Bake in preheated oven 180C for 20 mins.

Notes:
The original recipe uses 200 g of sugar which I find was way too sweet. So I halve the amount of sugar.

The original recipe uses milk. I change it to Thickened cream so that the egg smell is not so strong.

The custard is soft and sweet and supposed to have a bit of burnt spots at the top. Uneaten tarts can be kept in the fridge and reheated using a toaster oven (toast for 5 mins).

thicken cream you use.. is that the Nestle one in a small blue tin?

Bulla brand or Paul's brand. I find the tinned ones very thin..

Gina,

When you say the egg smell is strong, do you mean the 'saeng' smell of the egg?
