Pickled Ginger(recipe n pic)

Ingredients
1 whole young ginger
500ml red glutinous rice wine

Method
1. Wash and peel away the skin of the young ginger.
2. sliced thinly.
3. use a large glass jar, pour wine into it.
4. Add sliced ginger in and make sure the wine covers the ginger slices.
5. Cover and leave it to soak overnight in the fridge.
6. By the next day, its ready for consumptio.

What to use it for?
1. Add a few slices on top of fish or prawns for steaming.
2. Add to the wok to fry till fragrant, then add kailan or other veggie to fry
3. Can be eaten straight like a cold appetizer or with Century eggs

Storage
As long as the gingers are soak in the liquid, it keeps indefinitely. If you have only left a bit of gingers, dish it out and store into another smaller jar. Pour a bit of the wine liquid into the smaller jar with the gingers.

Then starting slicing a new batch of ginger again. This liquid can be reuse several times.

Do not throw away the wine liquid. Its very flavourful with ginger and can be use too. Especially when you cook a tonic soup. Just add a tablespoon full to your bowl of soup..drink it warm and it helps to expel wind(colic) too.

So..where to find Red Wine? Make your own! grin

Gina,

Is this supposed to be red glutinous rice wine or rice wine vinegar?

its wine..hong chao jiu, not vinegar. I don't make vinegar at home. Coz under utilized. I have alot of wine. so I use it to cook and make pickles.

the ginger is not so spicy hot if you use wine. in fact, its slightly sweeter with the wine and can be eaten as it is like those chinese pickles that is served as a cold appetizer in chinese restaurants.

next, I am going to try Bitter gourd yummy

yes..14 bottles..10 small jars, 15 Nescafe jars and 6 giant ones for making wine! grin

she has been making rice wine for over a year now.. cheers so thus, the number of bottles she has collected over time to harvest the wine.
