Thai Pandan Chicken(recipe and pic)

I didn't have enough hands to take the photos of how to wrapped the chicken. Maybe next time I will get Natasha to do the wrapping and I can take a picture.



this recipe yields 10 pcs.
Ingredients:
5 pcs chicken fillet(without skin)
10 pcs Pandan leaves

Seasonings:
1 tbsp lemon grass/Serai(chopped)
1 tbsp Fish Sauce
1 tsp sugar
1 tsp Dark Soya sauce
1 tsp salt
1 garlic(chopped)
2 shallots(chopped)
1 tsp Tumeric powder

Method:
1. Wash and dry pandan leaves.
2. Diced chicken into small bite sizes.
3. Marinate with seasonings for 2 hours.
4. Wrap 1 tbsp of chicken filling in each leaf.
5. Deep fry over high heat for 5 mins.

yes..you can BBQ it. and make this ahead of time..get more hands to help you and keep in the fridge. Ready to eat, then grill or deep fry.

Buay will be back this weekend, I need extra MOUTHS to help to taste food. Please bring tupperware too.

and i am not joking. I'm serious! Everytime she gets back to Singapore, I gained 2kg. Then when she leaves for an overseas trip, I go on a rabbit diet.

you can cut down the fish sauce if you like. As each person has their own level of tolerance for salt, sugar, etc.

I know.. my salt tolerance level very low.

DH said too salty.. Maybe I leave out the fish sauce next time.
