Another pandan recipe for you kittykat. Adapted from Alex Goh's Fantastic Cheesecakes.

Ingredients

(A)
500 g cream cheese
100 g sugar (I only put in 75 grams..but still abit sweet for me)

(B)
3 egg yolks

(C)
20 g flour (I use soy flour)
20 g corn flour

(D)
200 g coconut milk
1 tsp pandan leaf juice
drops of green food colouring

(E)
3 egg whites
75 g sugar

Method
1. Cream (A) until light. Add (B) and cream until smooth.
2. Add (C) and mix until well combined.
3. Add (D) into the mixture from step (2). Mix until well combined.
4. Whip (E) until soft peaks. Add it into the cheese mixture from step (3). Mix until well incorporated.
5. Grease and line bottom of a 23cm springform tin. Pour the cheese filling onto the tin.
6. Bake in waterbath at 160 degrees celsius for 60-70 minutes or until firm and golden brown.
7. Remove from oven and set aside to cool.
8. Refrigerate it for 5 hours. Remove teh cake from the tin. Serve.

Honestly I like the Pandan Cheesecake more cause the feather light cheesecake taste abit more milky. But I suppose it is because I didnt make the chocolate mixture so the milk overpower the whole cake...hehe
